His story on the island began unexpectedly. While working at Dos Palillos in Barcelona and studying at Espai Sucre , he was given the opportunity to move to Mallorca. Without thinking twice, he took a flight and in just three days he was already settled in Capdepera, a place he didn't know and which, according to him, he didn't even know was an island . His first impression was peculiar: empty streets in winter and a chef, Andreu Genestra , cleaning windows in the restaurant where he would begin a new professional stage.
What seemed like a long shot turned out to be the start of a promising career in Mallorca. For four years he worked side by side with Andreu Genestra , moving from head pastry chef to head chef in just three months. In that time, he saw the kitchen team grow from three people to a team of 22 , consolidating himself as a fundamental pillar in the evolution of the restaurant.
His connection with Mallorca has been so deep that he is already recognized as “a very Mallorcan Mexican” . So much so that he has decided to stay on the island permanently, finding it his second home.
David Moreno currently heads the kitchen at the prestigious Hotel Can Simoneta , after having left his mark at the Melassa restaurant at the Hotel Mealbeach . At Can Simoneta, his culinary proposal continues to explore the richness of the Mexican-Mediterranean fusion, creating a surprising menu that invites diners to discover vibrant flavours and unique gastronomic experiences.
