Reinventing the Cocktail Experience
MATIAS IRIARTE
Cocktail making is a constantly evolving sensory experience. Matías Iriarte (Argentina, 1984) is a reference in contemporary mixology, redefining the way cocktails are enjoyed in Spain.
His story began at the age of 16 , working in a nightclub in Mallorca after moving with his family. It was then that bartender Fabio Raffelli showed him that cocktail making could be a profession with creativity and soul.
Although he studied Psychology at the University of the Balearic Islands, his true calling led him to travel the world, training at events such as London Cocktail Week and the Bar Convent Berlin. For him, mixology is in full evolution: "The history of cocktails is being written right now."
A REFERENCE IN PALMA
In 2008, Matías took on the challenge of reinventing Ginbo , transforming it into one of the best cocktail bars in Spain, winning the award for Best Cocktail List in 2016.
His passion for innovation led him to found Chapeau 1987, a cocktail & whiskey bar with more than 200 whiskey references, and Sala de Personal, a revolutionary reverse pairing concept where cocktails inspire the dishes. This project was awarded Best Opening in Spain at FIBAR 2023 and recognized in 50Best Discovery.
A RECOGNIZED BARTNEDER
Winner of the Bacardi Legacy Spain 2017 with his cocktail El Luchador, Matías is an ambassador for Bodegas Suau and a reference in Madrid Fusión. In 2018 he was a finalist in the National Gastronomy Awards, consolidating his impact in mixology.
Beyond creating cocktails, he designs experiences , redefining cocktails in Spain with an innovative and sensorial approach.
